Rasabali is indeed a delicious and popular sweet dish from Odisha, kendrapada. India. It's made primarily from paneer (Indian cottage cheese), sugar, and flavored with cardamom. Here's a basic recipe to make Rasabali at home
Ingredients:
* 2 cups paneer (Indian cottage cheese), grated
* 1/2 cup maida (all-purpose flour)
* 1 cup sugar
* 4-5 green cardamom pods, powdered
* A pinch of baking powder
* Ghee or oil for frying
* Water for kneading dough
* Chopped nuts for garnishing (optional)
Instructions:
1. Preparation of Paneer:
. Take fresh paneer and grate it. If you are using store-bought paneer, make sure to crumble it well.
. Knead the grated paneer until it becomes smooth.
1. Preparation of Rasabali Dough:
. Add maida (all-purpose flour) and a pinch of baking powder to the kneaded paneer.
. Mix it well to form a smooth dough. If required, add a few drops of water to bind the dough together.
. Make small balls from the dough and flatten them slightly to give them a round shape. Keep aside.

Preparation of Sugar Syrup:
. In a wide pan, add sugar and water (just enough to immerse the sugar) and heat it.
. Stir continuously until the sugar dissolves completely and the syrup thickens a bit. Add cardamom powder to it and mix well.
. Turn off the heat and keep the syrup aside.
Frying Rasabali:
. Heat ghee or oil in a frying pan over medium heat.
. Once the ghee/oil is hot, carefully place the flattened paneer balls into it. Fry them until they turn golden brown on both sides.
. Remove the fried Rasabali from the ghee/oil and drain excess oil by placing them on a tissue paper.
1. Soaking Rasabali:
. Immerse the fried Rasabali into the prepared sugar syrup. Ensure they are soaked well in the syrup.
. Let them soak for at least 1-2 hours so that they absorb the flavors of the syrup.
1. Serving Rasabali:Once soaked, Rasabali is ready to be served. Garnish with chopped nuts if desired.
Serve it chilled or at room temperature as per your preference.
