Dahibara Aludam

Dahibara Aludam" is a popular street food dish originating from the Indian state of Odisha Cuttack. It consists of two main components: "Dahibara" and "Aludam."

– 1 cup urad dal (black gram) – 1-2 green chilies (finely chopped) – 1-inch piece of ginger (finely grated) – Salt to taste – Oil for deep frying

– 2 cups thick yogurt – 1 tsp roasted cumin powder – Salt to taste – Sugar to taste – Chopped coriander leaves for garnish

Aloo Dum (Potato Curry)

– 3-4 medium-sized potatoes (boiled, peeled, and diced) – 1 large onion (finely chopped) – 2 tomatoes (finely chopped) – 2-3 green chilies (slit lengthwise)

– 1 tsp ginger-garlic paste – 1 tsp cumin seeds – 1 tsp turmeric powder – 1 tsp red chili powder – 1 tsp garam masala powder

– Salt to taste – Chopped coriander leaves for garnish – Oil for cooking

1. Wash and soak urad dal in water for 4-5 hours or overnight. 2. Drain the water and grind the dal into a smooth paste using little water. The consistency should be thick. 3. Add chopped green chilies, grated ginger, and salt to the batter. Mix well.

1. Heat oil in a pan. Add cumin seeds and let them splutter. 2. Add chopped onions and sauté until they turn golden brown. 3. Add ginger-garlic paste and slit green chilies. Sauté for a minute.

1. Place a few soaked baras on a serving plate. 2. Pour some more yogurt mixture over them. 3. Serve with a generous serving of aloo dum on the side. 4. Garnish with chopped coriander leaves before serving.
